日本麵豉醬焗三文鱼

SALMON Braised in Miso paste

材料

Ingredient

  1. 三文鱼柳 2 磅
  2. 日本麵醬 6 湯匙

調味料

  1. 糖 6 湯匙
  2. 胡椒粉 ½ 茶匙
  3. 辣豆辦醬 2 茶匙   (Optional)
  4. 油 1 茶匙
  1. 2 lbs. Salmon Filet.
  2. 6 Tsp Japanese Miso paste.

Seasoning

  1. 6 Tsp Sugar.
  2. 1/2 White pepper powder.
  3. 2 tsp hot bean paste (Optional).
  4. 1 tsp Oil.
製法
Method
  1. 焗爐預熱至 375 F
  2. 把日本麵豉醬及調味料混合均勻
  3. 焗盤上放置錫紙 , 在鍚紙中部先塗上薄層巳混合的麵醬調味料 ( 約全部調味料的 1/5 份量 )
  4. 三文鱼去鱼鱗 , 洗淨 , 抹乾
  5. 放入三文鱼 , 鱼皮向下 , 在三文鱼表面塗上剩餘 4/5 份量調味料
  6. 用錫紙密封三文鱼
  7. 焗盤放入焗爐 ,  用 375 F焗 20 分鐘
  8. 取出全盤三文鱼 , 打開錫紙 , 最好即時趁熱享用
  1. Pre-heat oven to 375 F.
  2. Mix well the Japanese Miso paste and all seasoning items.
  3. Place a piece of tin foil on baking pan (size big enough to make a closed pocket for salmon). On tin foil apply a thin layer of mix from 2. for size of salmon (about 1/5 of mix). 
  4. Remove scale of salmon; clean and dry with paper.
  5. Put salmon on top of mix; skin face down; top of salmon apply thin layer of remaining 4/5 mix.
  6. Seal all 4 sides of tin foil; (if foil too small, add another piece on salmon; see video) forming an air-tight pocket enclosing salmon; Make 4 upright edges, about 3/4" high all around the 4 sides of the tin foil pocket.
  7. Put baking pan in oven at 375 F for 20 minutes.
  8. Slide whole pocket onto serving plate; Open foil; Enjoy HOT.
